Almond joy Instant Pot cheesecake

If you’re a fan of the classic candy bar Almond Joy, then you’re going to love this Almond Joy Instant Pot cheesecake recipe. It’s rich, creamy, and loaded with all the delicious flavors of coconut, almonds, and chocolate. And the best part? It’s super easy to make in your Instant Pot!

INGREDIENTS:

2 cups of almond flour

1/4 cup of coconut flour

1/4 cup of unsweetened cocoa powder

1/4 cup of Swerve sweetener

1/2 cup of melted butter

4 (8 oz) packages of cream cheese, softened

1 cup of Swerve sweetener

1/2 cup of unsweetened shredded coconut

1/2 cup of chopped almonds

1 tsp of coconut extract

1 tsp of vanilla extract

4 eggs

1/2 cup of sugar-free chocolate chips

INSTRUCTIONS:

In a mixing bowl, combine the almond flour, coconut flour, cocoa powder, and 1/4 cup of Swerve sweetener.

Add the melted butter and mix until well combined.

Press the mixture into the bottom of a 7-inch springform pan.

In another mixing bowl, beat the cream cheese and 1 cup of Swerve sweetener until smooth and creamy.

Add the shredded coconut, chopped almonds, coconut extract, and vanilla extract, and mix until well combined.

Add the eggs, one at a time, mixing well after each addition.

Pour the cheesecake batter on top of the crust.

Cover the pan with foil.

Add 1 1/2 cups of water to the Instant Pot.

Place the trivet inside the Instant Pot.

Place the covered cheesecake pan on top of the trivet.

Close the Instant Pot lid and seal the valve.

Set the Instant Pot to manual high pressure for 40 minutes.

Once the cooking time is complete, allow the pressure to release naturally for 10 minutes.

Then, quick release any remaining pressure.

Carefully remove the cheesecake from the Instant Pot.

Allow the cheesecake to cool to room temperature.

Melt the sugar-free chocolate chips in the microwave.

Drizzle the melted chocolate over the cheesecake.

Place the cheesecake in the refrigerator for at least 2 hours, or until fully chilled.

Once chilled, slice and serve!
